What are easy traditional dishes/desserts from South American countries?

I have to bring in a food from a South American country or Spain. And I can’t find any deserts or dishes with not a lot of food to make it. So do you guys know any easy recipes and if so I need the country they originate from? A lot of these recipes call for fruits I don’t even think I can FIND.
What is ceviche? I keep seeing that. But spelled with a C.
